We searched high and low and are so excited to finally have a kidney-friendly noodle kugel pudding recipe to share with all of you! Traditionally served on Shabbat and Jewish holidays, noodle kugel is a baked pudding casserole, which can be sweet or savory and is often a side dish. We are thrilled to add this kidney-friendly noodle kugel to our recipe section! Now, let’s get cooking!
Kidney-Friendly Noodle Kugel Ingredients
Appropriate for: CKD, Non-dialysis, Diabetes, Dialysis, Vegetarian, Heart Healthy, Low Protein, Low Sodium

- nonstick cooking spray
- 1 pound whole-grain wide noodles
- 5 large eggs, whisked
- 2 tsp cinnamon (a little more to sprinkle on top)
- 1/2 cup sugar
- pinch of Kosher salt
- 3 cups unsweetened applesauce
- 2 TBSP vegetable oil
How to Prepare Kidney-Friendly Noodle Kugel
- Preheat oven to bake at 350° F
- Spray a 9×13 baking dish with cooking spray
- Bring a large pot of water to boil and cook noodles for 5 minutes
- Drain and rinse noodles with cold water
- Note: While noodles are cooking, whisk together eggs, 2 teaspoons cinnamon, sugar, salt, and applesauce
- Coat the same pot that cooked the noodles with oil
- Add cooked noodles back to pot
- Fold in oil and egg/applesauce mixture
- Transfer noodles to prepared baking dish and sprinkle with cinnamon.
- Bake 45 to 50 minutes until the kugel is completely set and the noodles on top are slightly crispy and browned
- Optional: Sprinkle remaining cinnamon on top
