Spiced Apple Coffee Cake

On those chilly, frost-on-the-window mornings, nothing says cozy better than a slice of spiced apple coffee cake. Not only is this a kidney-friendly coffee cake, but it’s also delicious straight from the oven or the next day, warmed up for an early breakfast with a hot cup of your favorite coffee or mulled apple cider. Spiced Apple Coffee Cake Ingredients

Appropriate for: CKD, Non-dialysis, Dialysis, Vegetarian, Heart Healthy, Low Protein, Low Sodium

15 servings

  • 3 apples (Cortland, Golden Delicious or Gala)
  • 1 TBSP cinnamon
  • 2/3 cup sugar
  • 3 cups all purpose flour
  • 1 cup canola oil
  • 3 large eggs, lightly beaten
  • 1 cup unsweetened apple sauce
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 2 tsp vanilla extract
  • Whipped cream (optional)

How to Prepare Spiced Apple Coffee Cake

  • Preheat oven to 350 degrees F
  • Spray spring form or round cake pan with cooking spray; dust with flour
  • Tap slightly over sink to remove excess flour
  • Peel and cut apple into medium sized cubes
  • Place in water with 1 TBSP lemon juice
  • Combine cinnamon and 1/3 of the sugar
  • Place drained apples in mixture and toss
  • Combine remaining dry ingredients together
  • Separately, combine all wet ingredients
  • Mix apples and sugar into the wet ingredients
  • Add wet ingredients to dry ingredients
  • Mix batter until it just comes together
  • Pour mixture into cake pan and bake for 75 minutes (or when toothpick comes out clean)
  • Let stand on baking rack to cool
  • Optional: serve with whipped topping
