15-Minute Mexican Egg Skillet Ingredients

  • 8 eggs (or liquid egg)
  • 2 green onions, sliced thin
  • 1 tsp chili powder
  • 1/4 cup ketchup (low sodium)
  • 2 TBSP butter
  • Unsalted tortilla chips (6 oz bag), broken into pieces

How to Prepare 15-Minute Mexican Egg Skillet

  • Beat eggs until well blended
  • Add the onion, chili powder, and ketchup
  • Beat again until well mixed, and set aside
  • Melt butter in a skillet
  • Add the tortilla chips and sauté over medium heat until warmed through
  • Stir in egg mixture and scramble until the desired consistency
  • Serve
