- 8 eggs (or liquid egg)
- 2 green onions, sliced thin
- 1 tsp chili powder
- 1/4 cup ketchup (low sodium)
- 2 TBSP butter
- Unsalted tortilla chips (6 oz bag), broken into pieces
How to Prepare 15-Minute Mexican Egg Skillet
- Beat eggs until well blended
- Add the onion, chili powder, and ketchup
- Beat again until well mixed, and set aside
- Melt butter in a skillet
- Add the tortilla chips and sauté over medium heat until warmed through
