Veggie Lentils with Peanut Sauce Ingredients
- 3 tablespoons peanut butter, unsalted
- 2 cloves garlic
- ½ tablespoon soy sauce, low-sodium
- 1 medium lime, zested and juiced
- 2 tablespoons cilantro, chopped
- 2 teaspoons sriracha hot sauce
- 1 medium (28 grams) jalapeño pepper, stem removed
- 1 tablespoon sugar
- ½ cup coconut milk
- ½ teaspoon sesame oil (optional, included in the nutrient analysis)1 ½ cups water
- ½ cup red lentils, washed and drained
- 1 cup white rice, uncooked:
- 2 teaspoons grapeseed oil
- ⅓ cup (109 grams) red onion, sliced
- ½ cup (75 grams) bell pepper, sliced
- ¼ cup (34 grams) carrots, sliced
- ½ medium (95 grams) zucchini, sliced
How to Prepare Veggie Lentils with Peanut Sauce
- Blend all the peanut sauce ingredients together in a blender or food processor until smooth and set aside.
- Boil 1 ½ cups water in a medium saucepan. Add lentils, reduce heat to simmer, and cook for 10 to 15 minutes, until tender. Drain and reserve.
- Cook rice according to package directions while lentils are cooking. Remove from heat and reserve.
- Heat oil in a large skillet over medium-high heat. Add onions and cook until translucent, 3 to 4 minutes.
- Add bell peppers, carrots and zucchini and cook for another 4 to 5 minutes, until slightly tender.
- Add the peanut sauce and lentils and mix well. Heat to simmer and cook for about 4 minutes, until sauce is slightly thickened, and lentils are cooked to desired consistency, Reserve for 5 minutes.
- Distribute rice onto 4 plates or bowls and spoon ¾ cup of lentils on top of each serving. Serve with additional garnish of cilantro
